Beignets

French Market Beignets

1 package active dry yeast
1 1/2 cups warm water (not over 102 F)
1/2 cup sugar
1 teaspoon salt
2 eggs
1 cup evaporated milk
7 cups all purpose flour, divided
1/4 cup vegetable shortening, melted
oil for frying
powdered sugar

In a large bow, sprinkle yeast over warm water. Stir until dissolved. Add sugar, salt, eggs,  and milk and whisk until blended.

Add four cups of the flour and beat until smooth. Add shortening and beat in remaning flour.

Cover bowl and chill overnight.

Next morning, pre-neat oil in deep fryer or large kettle to 360 degrees F.

Roll dough out on floured board to about 1/8 inch thickness. Cut into 2 1/2 inch squares.

Deep fry at 360 degrees 2 to 3 minutes or until lightly browned on each side. Drain on paper towels.

Sprinkle heavily with powered sugar.

Makes about 5 dozen
