Blackberry Dumplings

A new twist on an old favorite. Blackberries are one of the best parts of summer in the South, and this is a delicious way to enjoy them. A little ice cream and you're in Heaven!

1 quartFresh or frozen blackberries
1 cup Plus 1 tablespoon sugar
3/4 teaspoon Salt, divided
1/2 teaspoon Lemon extract
1 1/2 cup All-purpose flour
2 teaspoons  Baking powder
1/4 teaspoon Ground nutmeg
2/3 cup Milk   Cream or whipped cream optional

 Preheat oven to 400 degrees. In a Dutch oven, combine the blackberries, 1 cup sugar, 1/4 ts salt and lemon extract. Bring to a boil. Reduce heat and simmer for 5 minutes. In a mixing bowl, combine the flour, baking powder, nutmeg, 1 tbsp. sugar, and remaining salt. Add the milk. Stir  just until mixed. Dough will be very thick. Drop by tablespoonfuls into six mounds onto the hot blackberry mixture. Bake at 400 degrees for 35 to  45 minutes. Serves 6.
