Cracklin' Cornbread

Cracklin’ corn bread is made with cracklings, which are bits of roasted pork skins. You can make your own, or you may be able to find them at small Mom & Pop groceries.

Ingredients:
1 1/2 C  yellow cornmeal
1/4 C  oil or bacon drippings
1/2 C  flour
1 Tbsp.  baking powder
1/2 tsp. salt
1 to 2 Tbsp. sugar
1 C  cracklings
1 C  milk
1 egg, beaten

Instructions:

Preheat oven to 425 degrees. Pour oil in skillet or corn stick pan and heat for 3 minutes.

Combine dry ingredients in bowl. Add milk and egg. Mix well.

Add heated oil and mix well.

Pour mixture into hot skillet and bake 20 to 25 minutes or until wooden pick  inserted into center comes out clean.
