Macaroni and Cheese

The real stuff

3 tbs. butter
3 tbs. flour
2 c. milk warmed
1 1/2 lbs. elbow macaroni- cooked
1 lb. sharp cheddar cheese grated
1 lb. monterey jack cheese grated

 In small sauce pan, melt butter. Add flour and whisk together to lightly cook flour. Add milk and whisk until smooth and slightly thickened. When thickened,  add 3/4 of  each of the 2 cheeses. Mix  well and place in lgecasserole dish. Top with remaining cheese. Bake at 350 degrees for 20 minutes.
