This is the best sweet potato pie I have ever put in my mouth. The recipe is from my Grand Aunt, Ruth Hill of Shelby, NC
3 large sweet potatoes
1 stick butter 3 eggs, beaten 2 cups sugar 1 small can evaporated milk 1 1/2 Tbsp. cornstarch 1 tsp. vanilla 1 tsp. lemon flavoring 3 pie shells
Peel sweet potatoes, then boil them whole; drain water. Mash potatoes with butter. Add eggs and milk. Combine sugar with cornstarch; add to potato mixture. Finally, add vanilla and lemon flavoring.
Pour into pie shells. Bake at 350 degrees until brown. Makes 3 pies.
