Strawberry Cobbler

Strawberry Cobbler

Dough
1 3/4 c unbleached white flour
1 tsp. salt
1 T baking powder
2 T sugar
6 T cold butter
3/4 c milk

Filling
1 c sugar
1/3 c unbleached white flour
1 tsp. salt
1/2 c water
3 T fresh lemon juice
2 qt. strawberries, stemmed, cut in 1/2

Topping
2 T brown sugar
2 T butter
1.To prepare dough: Combine flour, salt, baking powder, and sugar in bowl. Cut in cold butter until dough has the consistency of coarse sand (or use food processor). Add milk and gently knead just until a ball is formed. Refrigerate.
2.Preheat oven to 400 degrees.
3.Combine sugar, flour, and salt for filling. Slowly whisk in water and lemon juice. Stir into strawberries.
4.Place fruit in 9" x 13" glass baking dish. Bake for 15 minutes, or until fruit is bubbling. Stir.
5.Tear off 1/4 inch thick, half dollar size pieces of dough; place on top of berries; covering the entire surface. Dot with 2 T butter, sprinkle with brown sugar.
6.Return to bake 30 minutes or until golden brown
