Spoon Bread

A bread made very similar to a dressing, used as an accompaniment for meat and vegetables.

Spoon Bread

1 Cup boiling water
1/2 Cup cornmeal
1/2 Cup skim milk
1/2 tsp. salt
1 1/2 tsp. baking soda
1 Tbs. Baking powder
1 Tbs. Corn oil
2 eggs, separated
corn oil spray
Preheat oven to 375 degrees.
Pour boiling water over cornmeal. Stir until smooth.
Beat in remaining ingredients, except egg whites.
Beat egg whites until stiff. Fold into mixture.
Turn into 1 1/2 -quart casserole dish coated with corn oil spray.
Bake 25 to 30 minutes until set.
Spoon into serving dishes.

Yield: 6 servings (3 cups)
