Rick’s Sweet Potato Pudding
6 medium sweet potatoes 1 tsp. vanilla extract 1 tsp. orange extract 1/2 cup half and half 1 cup firmly packed brown sugar
2 tsp. cinnamon 1/4 tsp. ground ginger 1/4 tsp. nutmeg 1/4 cup raisins 1/4 cup coconut
Boil sweet potatoes until fork tender. Plunge into cold water and peel. Put them in a large mixing bowl and mash thoroughly. Add the remaining
ingredients and stir until well blended.
Place in a covered baking dish and bake for 30 minutes at 350 degrees.
